Rosemary Broasted Chicken

Hi Dennis,

Just a quick note to say we roasted the half chicken for dinner and it was wonderful! Super moist and flavorful.

Preheat oven to 350 degrees. Line a roasting pan with foil. Place roasting rack on top; set aside. Pat dry River of Dreams ½ chicken with paper towels. Place skin side up on rack.

In a small bowl, combine:

1 tablespoon kosher salt

1 tablespoon lemon zest

1 tablespoon fresh rosemary, minced (about two 4” sprigs)

Stir to combine.

Rub skin with olive oil, then sprinkle rosemary seasoning all over top of chicken. Place in oven and roast for 60 to 70 minutes. (Place foil on top if chicken is getting too brown.) Insert instant read thermometer in thickest part of thigh away from bone. When thermometer registers 160 degrees, remove from oven and let rest 10 minutes. Temperature will continue to reach 165 degrees. Separate thigh and drumstick and remove wing. carve white meat and serve.

To roast a whole chicken, double seasoning mix and roast 1-1/2 hours to 1 hour and 45 minutes, depending on size of bird.
